Broccoli Soup

As the season changes, this is the perfect time to start thinking about supporting your immune system ready for the winter months.


This simple, immunity boosting soup packs a great punch of essential vitamins and minerals. In fact, it provides a little bit of almost every nutrient you and your family need.

Vitamin C, K1, B9, Potassium, Manganese, iron, Potassium, phosphorus, and selenium.

Rich in antioxidants and plant compounds including sulforaphane, one of the most studied plant compounds that may protect against types of cancer too.



Short of time? Why not double the recipe and pop some in your freezer?


Recipe:

  • 1 large Broccoli crown (organic if poss), chopped into florets
  • 1 large potato, peeled and diced
  • 2 med. onions – peeled and roughly chopped
  • 1 Kallo, low salt, organic, gluten free, vegetable stock cube – sprinkled in approx. 1.2 L water
  • 2-3 cloves of garlic – peeled and roughly chopped
  • 3-4 teaspoons olive oil

Method

  1. In a large pan, medium heat, sauté the potato, onion, and garlic in olive oil for 5 minutes, stirring occasionally.
  2. Add broccoli, stir well, add vegetable stock and simmer (for approx. 20 mins).
  3. Check all vegetables are soft and ‘whizz’ until smooth.

Season, serve and enjoy!
